Sesame Pork Rice Salad

Ingredients

3 cups cooked rice
1 1/2 cups slivered cooked pork
1/4 pound fresh snow peas, trimmed and cut into julienne strips
1 medium cucumber, peeled, seeded and cut into julienne strips
1 medium red pepper, cut into julienne strips
1/2 cup sliced green onions2
tablespoons sesame seeds, toasted (optional)
1/4 cup chicken broth
3 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon peanut oil
1 teaspoon sesame oil

Instructions

Combine rice, pork, snow peas, cucumber, pepper, onions and sesame seeds in large bowl. Combine broth, vinegar, soy sauce and oils in small jar with lid. Pour over rice mixture; toss lightly. Serve at room temperature or slightly chilled. Enjoy with a cold bottle of Tsingtao Beer.

Yield: 6 servings
